Kombu is a large brown seaweed with a firm texture, with a taste that is both slightly iodized and sweet. You rehydrate it for about 30 minutes in warm water, unroll it and cut it into thin strips. It can be used in omelettes, salads, sandwiches, soups, etc.
Kombu is used in Japanese cuisine to prepare Dashi.
