Balsamic cream is thicker and sweeter than vinegar, is just as well suited to vinaigrettes as it is to marinades. Use it to decorate your plates and even to add a bittersweet touch to your desserts. Try it as a surprising topping on vanilla ice cream.
Unlike most balsamic creams, which contain artificial aromas and thickeners such as cornstarch, fructose or glucose, this version has only two ingredients: 90% organic cooked grape must and 10% organic wine vinegar. Its rich taste and fluid texture are reminiscent of a traditional balsamic vinegar aged over 10 years, rather than a cream made from a simple vinegar reduction.
